Whether you’re a longtime vegan or just exploring plant-based options, these sushi rolls promise a burst of flavor that satisfies your sushi cravings while adhering to a vegan diet.

Ingredients

  • 2 cups sushi rice
  • 3 cups water
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 6 sheets nori
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 avocado, sliced
  • 1/2 red bell pepper, julienned
  • 1/3 cup pickled radish
  • Soy sauce (for serving)
  • Wasabi (for serving)
  • Pickled ginger (for serving)

Steps:

  1. Rinse the sushi rice under cold water until the water runs clear. Combine with water in a rice cooker and cook according to manufacturer’s instructions.
  2. Once cooked, transfer the rice to a large bowl and gently fold in rice vinegar, sugar, and salt. Allow to cool to room temperature.
  3. On a bamboo sushi mat, place one sheet of nori, shiny side down. With wet fingers, evenly spread a thin layer of rice over the nori, leaving a small margin at the top edge.
  4. Arrange a line of cucumber, carrot, avocado, bell pepper, and pickled radish on the rice towards the bottom.
  5. Start rolling the sushi tightly from the bottom edge using the bamboo mat. Seal the edge with a little water.
  6. Serve with soy sauce, wasabi, and pickled ginger.
