    Smoky Vegan Carrot Lox Bagels offer a delightful alternative to traditional lox, capturing the essence of the sea with versatile carrots. Marinated in a mix of liquid smoke, soy sauce, and seasonings, the carrots imitate the flavor and texture of smoked salmon, making them a perfect topping for bagels. This vegan version is not only healthier but also caters to a broader range of dietary preferences, ensuring everyone can enjoy the brunch classic without compromise.

    Ingredients

    • 4 large carrots
    • 2 tbsp soy sauce
    • 1 tsp liquid smoke
    • 1 tbsp olive oil
    • 1 tbsp apple cider vinegar
    • 1/2 tsp garlic powder
    • 1/2 tsp smoked paprika
    • Bagels
    • Vegan cream cheese
    • Capers
    • Fresh dill

    Steps:

    1. Peel carrots into thin strips using a vegetable peeler.
    2. In a large bowl, mix soy sauce, liquid smoke, olive oil, apple cider vinegar, garlic powder, and smoked paprika.
    3. Add carrot strips and toss to coat. Let marinate for at least 1 hour.
    4. Preheat oven to 300°F (150°C).
    5. Arrange marinated carrot strips on a baking sheet.
    6. Let cool slightly, then refrigerate until ready to use.
    7. Slice bagels and spread with vegan cream cheese.
    8. Top with carrot lox, capers, and dill. Serve and enjoy.
