A festive vegan version of the traditional Irish fruit bread, perfect for any celebration.
Ingredients
- 1 cup dried fruit mix
- 1 cup strong black tea
- 1/2 cup brown sugar
- 1/4 cup applesauce (as egg substitute)
- 1 tsp baking powder
- 1 tsp mixed spice
- 1/2 tsp salt
Steps:
- Soak dried fruit in black tea overnight.
- Preheat oven to 325°F (165°C).
- Mix flour, sugar, baking powder, mixed spice, and salt in a large bowl.
- Stir in soaked fruit along with any leftover tea and applesauce.
- Pour into a greased loaf pan.
- Let cool before slicing.
