Recipe Description
This refreshing Mediterranean Quinoa Salad is packed with colorful vegetables and tossed with a lemony garlic dressing. Perfect for a hearty lunch or a light dinner, it’s rich in protein and fiber, keeping you full and energized.
Ingredients
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, sliced
- 1/4 cup feta cheese (vegan)
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 garlic cloves, minced
- Salt and pepper to taste
Steps:
- Rinse quinoa under cold water. Cook in 2 cups of water until fluffy.
- In a large bowl, combine cooked quinoa, cucumber, bell pepper, red onion, and olives.
- In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Chill for at least one hour before serving.
