Ingredients
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 2 teaspoons sesame oil
- 200g udon noodles
- 1 carrot, thinly sliced
- 2 green onions, chopped
- 100g baby spinach
- 1 cup shiitake mushrooms, sliced
- 1 teaspoon grated ginger
Steps:
- In a large pot, heat sesame oil over medium heat. Add garlic and ginger; sauté until fragrant.
- Add the carrots and mushrooms to the pot and cook for about 3 minutes.
- Pour in the vegetable broth, soy sauce, and mirin. Bring to a simmer.
- Add the udon noodles to the pot and cook according to package instructions, usually about 8-10 minutes.
- Stir in the spinach and green onions, cooking until the spinach wilts (about 2 minutes).
