    Warm up with this comforting and nutritious Vegan Udon Noodle Soup. This soup combines thick, chewy udon noodles with a flavorful broth enriched with soy sauce, mirin, and a variety of fresh vegetables. Perfect for a simple family dinner or a festive meal during special occasions, it’s a delightful way to enjoy traditional Japanese flavors with a vegan twist.

    Ingredients

    • 2 tablespoons soy sauce
    • 1 tablespoon mirin
    • 2 teaspoons sesame oil
    • 200g udon noodles
    • 1 carrot, thinly sliced
    • 2 green onions, chopped
    • 100g baby spinach
    • 1 cup shiitake mushrooms, sliced
    • 1 teaspoon grated ginger

    Steps:

    1. In a large pot, heat sesame oil over medium heat. Add garlic and ginger; sauté until fragrant.
    2. Add the carrots and mushrooms to the pot and cook for about 3 minutes.
    3. Pour in the vegetable broth, soy sauce, and mirin. Bring to a simmer.
    4. Add the udon noodles to the pot and cook according to package instructions, usually about 8-10 minutes.
    5. Stir in the spinach and green onions, cooking until the spinach wilts (about 2 minutes).
