Ingredients
- 1 small daikon radish
- 2 teaspoons salt
- 3 tablespoons rice vinegar
- 1 teaspoon sugar (optional, or use a sugar substitute for a healthier option)
- 1 teaspoon soy sauce (ensure gluten-free if necessary)
- 1 small piece of kombu (dried kelp)
- 1 teaspoon sesame seeds (optional)
Steps:
- Thinly slice the cucumber and daikon radish.
- In a mixing bowl, sprinkle salt over the sliced vegetables and massage gently. Let them sit for about 10 minutes.
- Squeeze the excess water out of the vegetables.
- In a separate bowl, mix together rice vinegar, sugar, and soy sauce until well combined.
- Add the squeezed vegetables and kombu to the mixture. Ensure that all pieces are submerged.
- Refrigerate for at least 1 hour before serving to enhance the flavors.
