Ingredients
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 teaspoon ground ginger
- 1 can (28 ounces) diced tomatoes
- 2 cans (15 ounces each) chickpeas, rinsed and drained
Steps:
- Heat the vegetable oil in a large pan over medium heat. Add the onions and cook until they’re soft and golden.
- Add the garlic, cumin, coriander, turmeric, cayenne, and ginger to the onions. Cook for 1-2 minutes until fragrant.
- Pour in the diced tomatoes with their juice and the chickpeas. Stir to combine all the ingredients. Bring the mixture to a simmer.
- Cover the pan and cook on low heat for about 20 minutes, or until the chickpeas are tender and the sauce has thickened.
- Stir in the garam masala and season with salt to taste.
