Recipe Description
These refreshing vegan Thai lettuce wraps are packed with flavors and textures. Made with tofu and crunchy veggies, wrapped in crisp lettuce leaves and served with a spicy-sweet peanut sauce, they are perfect for a healthy and light meal.
Ingredients
- 1 block of firm tofu, drained and crumbled
- 1 tablespoon olive oil
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 carrot, julienned
- 1 bell pepper, julienned
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon lime juice
- 1 teaspoon chili flakes
- 1/2 cup peanuts, chopped
- 1 head of lettuce, leaves separated
- Fresh cilantro for garnish
Steps:
- Heat the olive oil in a pan over medium heat.
- Add the onion and garlic, sautéing until soft.
- Stir in the crumbled tofu, carrot, and bell pepper. Cook for 5 minutes.
- Add the soy sauce, maple syrup, lime juice, and chili flakes. Cook for another 2 minutes.
- Remove from heat, and stir in the chopped peanuts.
