Ingredients
- 1 medium red onion, finely chopped
- 2 medium tomatoes, diced
- 1/2 cup cilantro, chopped
- 1 jalapeno, seeded and minced
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Steps:
- Rinse the diced cactus pads under cold water and drain well.
- In a large bowl, combine cactus pads, chopped onion, tomatoes, cilantro, and minced jalapeno.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
