    This Vegan Sloppy Joes recipe transforms a classic American comfort food into a plant-based delight. Utilizing lentils as a hearty base, this dish offers an umami-rich, tangy flavor profile that satisfies both vegans and meat-lovers alike. The addition of spices and a robust tomato sauce ensures richness in every bite. Ideal for lunch or dinner, these sloppy joes make a perfect centerpiece for a vegan meal, offering a balance of nutrients and flavors.     Ingredients

    • 1 tablespoon olive oil
    • 1 onion, diced
    • 2 cloves garlic, minced
    • 1 bell pepper, diced
    • 1 can tomato sauce
    • 2 tablespoons tomato paste
    • 1 tablespoon apple cider vinegar
    • 1 tablespoon soy sauce
    • 1 teaspoon chili powder

    Steps:

    1. Cook the lentils in a pot of boiling water for about 20 minutes, or until tender. Drain and set aside.
    2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes.
    3. Stir in minced garlic and diced bell pepper. Cook for another 5 minutes until peppers are softened.
    4. Add cooked lentils, tomato sauce, and tomato paste. Stir to combine.
    5. Mix in apple cider vinegar, soy sauce, chili powder, cumin, salt, and pepper. Simmer for 15 minutes.
    6. Serve the lentil mixture on toasted buns and enjoy.
