Ingredients
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1/4 cup raw cashews
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon chili sauce (optional)
Steps:
- Press tofu to remove excess water then cut into cubes.
- Heat oil in a large pan over medium heat, then add tofu cubes. Fry until golden brown and crispy on all edges. Remove and set aside.
- In the same pan, add garlic, onion, and bell peppers. Sauté until soft.
- Add cashews and stir until they are lightly toasted.
- Stir in soy sauce, hoisin sauce, chili sauce, and ginger. Mix well.
- Garnish with green onions, season with salt if needed, and serve immediately.
