    Recipe Description

This Vegan Aloo Gobi Masala is a cornerstone of Indian cuisine, beloved for its aromatic blend of spices, tender potatoes, and hearty cauliflower. The dish begins with a base of cumin seeds sputtered in hot oil, into which onions, garlic, and ginger are sautéed until golden. Tomatoes meld with this flavorful base, followed by a carefully measured mix of turmeric, coriander, garam masala, and red chili powder, creating a richly spiced sauce. Florets of cauliflower and chunks of potato are simmered until perfectly tender, absorbing the vibrant flavors. Finished with a sprinkle of fresh cilantro and a squeeze of lemon juice for brightness, this Aloo Gobi Masala is a warming, nutritious meal that pays homage to its Indian roots.

    Ingredients

    • 1 large cauliflower, cut into florets
    • 2 large potatoes, peeled and cubed
    • 3 tablespoons vegetable oil
    • 1 teaspoon cumin seeds
    • 1 large onion, finely chopped
    • 2 cloves garlic, minced
    • 1 inch ginger, minced
    • 1 large tomato, diced
    • 1 teaspoon turmeric powder
    • 1 teaspoon coriander powder
    • 1/2 teaspoon garam masala
    • 1/2 teaspoon red chili powder
    • Salt to taste
    • 2 tablespoons chopped cilantro
    • Lemon wedges for serving

    Steps:

    1. Heat oil in a large pan over medium heat and add the cumin seeds.
    2. Once the seeds start to splutter, add the onions, garlic, and ginger, sautéing until golden.
    3. Mix in the tomato and cook until soft.
    4. Stir in the turmeric, coriander, garam masala, red chili powder, and salt, cooking for a minute.
    5. Add the cauliflower and potatoes, mixing to coat them with the spices.
    6. Garnish with cilantro and serve hot with lemon wedges.
