Ingredients
- 1 cup long grain rice
- 1 cup brown lentils
- 1 cup pasta elbows
- 2 large onions, thinly sliced
- 1 can (14 oz) chickpeas, drained
- 2 cups tomato sauce
- 3 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- Vegetable oil for frying
- Vinegar and garlic sauce for serving
Steps:
- Rinse the rice and lentils, then cook separately according to their package instructions.
- Boil pasta until al dente; drain and set aside.
- Fry the onions in vegetable oil until brown and crispy. Set aside on a paper towel to drain.
- In a saucepan, combine the tomato sauce, minced garlic, cumin, salt, and pepper. Simmer for 10 minutes.
- Mix the cooked rice, lentils, pasta, and chickpeas in a large bowl.
- Accompany with vinegar and garlic sauce.
