Recipe Description

Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, peeled and diced
- 2 leeks, cleaned and sliced
- 3 celery stalks, sliced
- 2 potatoes, peeled and diced
- 1 liter vegetable broth
- Salt and pepper to taste
- Chopped parsley for garnish
Steps:
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, leeks, and celery. Cook for about 5 minutes until softened, stirring occasionally.
- Add the diced potatoes and cook for another 2 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat to a simmer, cover, and cook for about 20 minutes until the vegetables are tender.
- Season with salt and pepper to taste.
