    Irish Vegetable Soup

    Recipe Description

    A hearty and comforting traditional Irish soup made with a blend of root vegetables in a savory broth, perfect for cold evenings.

    Ingredients

    • 1 large onion, chopped
    • 2 carrots, peeled and diced
    • 2 leeks, cleaned and sliced
    • 3 celery stalks, sliced
    • 2 potatoes, peeled and diced
    • 1 liter vegetable broth
    • Salt and pepper to taste
    • Chopped parsley for garnish

    Steps:

    1. Heat the olive oil in a large pot over medium heat.
    2. Add the onion, carrots, leeks, and celery. Cook for about 5 minutes until softened, stirring occasionally.
    3. Add the diced potatoes and cook for another 2 minutes.
    4. Pour in the vegetable broth and bring to a boil. Reduce heat to a simmer, cover, and cook for about 20 minutes until the vegetables are tender.
    5. Season with salt and pepper to taste.
