  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 leeks, cleaned and sliced
  • 3 celery stalks, sliced
  • 2 potatoes, peeled and diced
  • 1 liter vegetable broth
  • Salt and pepper to taste
  • Chopped parsley for garnish

Steps:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, leeks, and celery. Cook for about 5 minutes until softened, stirring occasionally.
