A delightful blend of spinach and potatoes, seasoned with fragrant Indian spices, this Vegan Aloo Palak is a healthy and flavorful choice for any meal.
Ingredients
- 2 tablespoons olive oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 inch ginger, minced
- 2 cups spinach, blanched and pureed
- 2 potatoes, boiled and cubed
- 1 teaspoon ground coriander
- 1/2 teaspoon garam masala
- Salt to taste
- 1/2 cup water
- Fresh cilantro for garnish
Steps:
- Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
- Add onions and sauté until translucent. Stir in garlic and ginger, and cook for a minute.
- Add the spinach puree and cook for 5 minutes.
- Add boiled potatoes, coriander, garam masala, and salt. Mix well.
- Pour in water and simmer for 10 minutes.
