Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, minced
  • 2 cups spinach, blanched and pureed
  • 2 potatoes, boiled and cubed
  • 1 teaspoon ground coriander
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1/2 cup water
  • Fresh cilantro for garnish

Steps:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add onions and sauté until translucent. Stir in garlic and ginger, and cook for a minute.
  3. Add the spinach puree and cook for 5 minutes.
  4. Add boiled potatoes, coriander, garam masala, and salt. Mix well.
  5. Pour in water and simmer for 10 minutes.
