Ingredients
- 2 1/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups granulated sugar
- 1 1/2 tsp baking soda
- 3/4 tsp baking powder
- 3/4 tsp salt
- 1 1/2 cups non-dairy milk
- 3/4 cup vegetable oil
- 1.5 tbsp apple cider vinegar
- 1 tbsp vanilla extract
- 3/4 cup hot water
- 2 cups canned cherries in syrup
- 3 cups coconut whipping cream
- 1/4 cup powdered sugar
Steps:
- Preheat oven to 350 degrees F.
- In a large bowl, whisk together flour, cocoa, sugar, baking soda, baking powder, and salt.
- Add non-dairy milk, oil, vinegar, and vanilla to dry ingredients and mix until smooth.
- Gradually add hot water and continue mixing.
- Pour batter into two greased and floured 9-inch cake pans.
- Let cakes cool completely.
- Whip coconut cream with powdered sugar until fluffy.
- Drain cherries, reserving syrup.
- Cut each cake horizontally to create layers.
