Ingredients

  • 2 1/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 1/2 tsp baking soda
  • 3/4 tsp baking powder
  • 3/4 tsp salt
  • 1 1/2 cups non-dairy milk
  • 3/4 cup vegetable oil
  • 1.5 tbsp apple cider vinegar
  • 1 tbsp vanilla extract
  • 3/4 cup hot water
  • 2 cups canned cherries in syrup
  • 3 cups coconut whipping cream
  • 1/4 cup powdered sugar

Steps:

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, whisk together flour, cocoa, sugar, baking soda, baking powder, and salt.
  3. Add non-dairy milk, oil, vinegar, and vanilla to dry ingredients and mix until smooth.
  4. Gradually add hot water and continue mixing.
  5. Pour batter into two greased and floured 9-inch cake pans.
  6. Let cakes cool completely.
  7. Whip coconut cream with powdered sugar until fluffy.
  8. Drain cherries, reserving syrup.
  9. Cut each cake horizontally to create layers.
