    Vegan Caldo Verde

    Recipe Description

    Enjoy the warmth of a traditional Portuguese soup with a vegan twist. This Classic Vegan Caldo Verde features a savory blend of kale, spicy soy chorizo, and creamy potatoes, simmered to perfection. It’s a hearty and nourishing dish perfect for cozy winter nights.

    Ingredients

    • 1 tablespoon olive oil
    • 1 large onion, diced
    • 2 cloves garlic, minced
    • 6 cups vegetable broth
    • 2 large potatoes, peeled and diced
    • 1 vegan chorizo, chopped
    • 4 cups kale, chopped
    • Salt and pepper to taste

    Steps:

    1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onion is translucent.
    2. Add vegetable broth and potatoes, bring to a boil, then reduce heat to simmer. Cook until potatoes are tender, about 20 minutes.
    3. Add vegan chorizo and kale to the pot. Simmer until the kale is wilted and chorizo is heated through, about 10 minutes.
    4. Season with salt and pepper. Serve hot.
