Ingredients

  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 large potatoes, peeled and diced
  • 1 vegan chorizo, chopped
  • 4 cups kale, chopped
  • Salt and pepper to taste
