Ingredients
- 1 tablespoon olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 2 large potatoes, peeled and diced
- 1 vegan chorizo, chopped
- 4 cups kale, chopped
- Salt and pepper to taste
Steps:
- Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onion is translucent.
- Add vegetable broth and potatoes, bring to a boil, then reduce heat to simmer. Cook until potatoes are tender, about 20 minutes.
