    Ingredients

    • 1/2 cup fresh lemon juice
    • 3/4 cup maple syrup
    • 3/4 cup coconut oil (melted)
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon sea salt
    • 1 cup dates (pitted)
    • 1 cup raw almonds
    • 1/4 cup water

    Steps:

    1. 1. Begin by preparing the crust: Process dates and almonds in a food processor until the mixture sticks together. Press the mixture into the bottom of a lined springform pan.
    2. 2. For the filling: Drain and rinse the soaked cashews. Blend cashews, lemon juice, maple syrup, melted coconut oil, vanilla extract, and sea salt in a high-speed blender until very smooth.
    3. 3. Pour the filling over the crust and smooth the top with a spatula. Freeze the cheesecake for at least 4 hours or until solid.
    4. 4. Before serving, remove from freezer and let it thaw for about 30 minutes. Garnish with fresh fruit or zest if desired.
