    A traditional Paraguayan dish reimagined for vegans, this Classic Vegan Chipa Guasu is a succulent corn-based casserole that is delightfully savory. Comprised of fresh corn kernels blended with coconut milk and silken tofu, replacing the typical dairy ingredients, it’s baked to golden perfection, offering a crispy top layer with a soft, aromatic interior. Perfect for any festive occasion or a comforting family dinner.

    Ingredients

    • 1 cup silken tofu
    • 1/2 cup coconut milk
    • 1/3 cup olive oil
    • 1/4 cup finely chopped onion
    • 1 tsp baking powder
    • 1/2 cup cornstarch
    • Salt to taste
    • Fresh chives for garnish

    Steps:

    1. Preheat oven to 350°F
    2. Blend corn, tofu, and coconut milk until smooth
    3. Mix olive oil, onion, baking powder, and cornstarch in a bowl
    4. Combine with corn mixture and pour into a greased baking dish
    5. Bake for 50 minutes or until golden
