Recipe Description

Delightfully flaky and buttery croissants made entirely without dairy or animal products. Perfect for an indulgent breakfast or a treat on special occasions.

Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup sugar
  • 2 tsp salt
  • 1 tbsp instant yeast
  • 1 1/4 cups plant-based milk, lukewarm
  • 1 cup vegan butter, cold and cubed
  • 1 tbsp dijon mustard
  • Soy milk and agave syrup, for glazing

Steps:

  1. Combine flour, sugar, salt, and yeast in a large bowl.
  2. Add the lukewarm plant-based milk and mix to form a dough.
  3. Knead the dough for 5-10 minutes until elastic.
  4. Roll out the dough into a rectangle, and distribute the cubed vegan butter across 2/3 of the surface. Fold and roll several times to incorporate layers.
  5. Chill the dough for at least 1 hour.
  6. Place the croissants on a baking sheet, cover, and let rise until doubled in size.
  7. Preheat the oven to 375°F (190°C).
  8. Brush the croissants with a mixture of soy milk and agave syrup.
  9. Bake for 25 minutes or until golden brown.
