Recipe Description

A heartwarming and nutritious white bean soup, known as the national dish of Greece, perfect for colder months.

Ingredients

  • 2 cups white beans, soaked overnight
  • 1 large onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can diced tomatoes
  • 1/4 cup olive oil
  • 6 cups vegetable broth
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Parsley, for garnish

Steps:

  1. Rinse soaked beans and boil in fresh water for 10 minutes. Drain.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, cooking until softened.
  3. Add beans, vegetable broth, diced tomatoes, bay leaves, and oregano. Bring to a boil, then reduce heat and simmer for about 50 minutes, or until beans are soft.
  4. Season with salt and pepper. Serve hot, garnished with parsley.
