Recipe Description
A heartwarming and nutritious white bean soup, known as the national dish of Greece, perfect for colder months.
Ingredients
- 1 large onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can diced tomatoes
- 1/4 cup olive oil
- 6 cups vegetable broth
- 2 bay leaves
- 1 teaspoon dried oregano
- Salt and pepper to taste
Steps:
- Rinse soaked beans and boil in fresh water for 10 minutes. Drain.
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, cooking until softened.
- Add beans, vegetable broth, diced tomatoes, bay leaves, and oregano. Bring to a boil, then reduce heat and simmer for about 50 minutes, or until beans are soft.
- Season with salt and pepper. Serve hot, garnished with parsley.
