Recipe Description
This Classic Vegan Gumbo is packed full of okra, vegetables, and beans. Served over rice, it’s a hearty and warming dish perfect for colder months.
Ingredients
- 1 cup chopped onions
- 1 cup chopped bell peppers
- 3 cloves garlic, minced
- 1 cup chopped celery
- 2 cups sliced okra
- 1 can diced tomatoes
- 6 cups vegetable broth
- 2 bay leaves
- 1 teaspoon thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups cooked red beans
- 3 tablespoons vegetable oil
- 3 tablespoons all-purpose flour
Steps:
- Heat the oil in a large pot over medium heat. Add the flour, stirring continuously, to make a roux. Cook until it turns a dark caramel color.
- Add onions, bell peppers, celery, and garlic to the pot. Cook until vegetables are tender.
- Add okra, diced tomatoes, vegetable broth, bay leaves, thyme, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add red beans and cook for an additional 15 minutes.
- Serve over rice.
