Recipe Description

This Classic Vegan Gumbo is packed full of okra, vegetables, and beans. Served over rice, it’s a hearty and warming dish perfect for colder months.

Ingredients

  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 3 cloves garlic, minced
  • 1 cup chopped celery
  • 2 cups sliced okra
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked red beans
  • 3 tablespoons vegetable oil
  • 3 tablespoons all-purpose flour

Steps:

  1. Heat the oil in a large pot over medium heat. Add the flour, stirring continuously, to make a roux. Cook until it turns a dark caramel color.
  2. Add onions, bell peppers, celery, and garlic to the pot. Cook until vegetables are tender.
  3. Add okra, diced tomatoes, vegetable broth, bay leaves, thyme, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Add red beans and cook for an additional 15 minutes.
  5. Serve over rice.
