This Classic Vegan Masoor Dal is a comforting and hearty dish perfect for any time of the year. Red lentils are simmered with aromatic spices, tomatoes, and herbs to create a flavorful, protein-rich stew. This dish is not only nourishing but also incredibly easy to prepare, making it an ideal choice for quick weeknight dinners or a nutritious lunch.

Ingredients

  • 1 cup red masoor dal (red lentils), rinsed and drained
  • 1 large onion, finely chopped
  • 2 tomatoes, diced
  • 1 green chili, slit (optional)
  • 3 cloves of garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • 1/2 tsp garam masala
  • 1/2 tsp mustard seeds
  • 2 tbsp oil
  • Salt to taste
  • 4 cups water
  • 2 tbsp chopped cilantro for garnish

Steps:

  1. Heat oil in a pot over medium heat.
  2. Add mustard seeds and cumin seeds and let them splutter.
  3. Add chopped onions, green chili, and garlic. Sauté until onions are translucent.
  4. Stir in turmeric and diced tomatoes. Cook until tomatoes are soft.
  5. Add red lentils and water. Bring to a boil, then simmer for 20-25 minutes or until the lentils are soft and cooked through.
  6. Garnish with chopped cilantro before serving.
