This Classic Vegan Masoor Dal is a comforting and hearty dish perfect for any time of the year. Red lentils are simmered with aromatic spices, tomatoes, and herbs to create a flavorful, protein-rich stew. Ingredients
- 1 large onion, finely chopped
- 2 tomatoes, diced
- 1 green chili, slit (optional)
- 3 cloves of garlic, minced
- 1 tsp turmeric
- 1 tsp cumin seeds
- 1/2 tsp garam masala
- 1/2 tsp mustard seeds
- 2 tbsp oil
Steps:
- Heat oil in a pot over medium heat.
- Add mustard seeds and cumin seeds and let them splutter.
- Add chopped onions, green chili, and garlic. Sauté until onions are translucent.
- Stir in turmeric and diced tomatoes. Cook until tomatoes are soft.
- Add red lentils and water. Bring to a boil, then simmer for 20-25 minutes or until the lentils are soft and cooked through.
- Garnish with chopped cilantro before serving.
