    Ingredients

    • 1/2 cup vital wheat gluten
    • 1/4 cup nutritional yeast
    • 2 cloves garlic, minced
    • 1 tsp dried oregano
    • 1 tsp dried basil
    • Salt and pepper to taste
    • 2 tbsp soy sauce
    • 1/2 cup vegetable broth
    • 2 tbsp olive oil for frying

    Steps:

    1. Mash chickpeas in a large bowl until no whole pieces are left.
    2. Add vital wheat gluten, nutritional yeast, garlic, oregano, basil, salt, pepper, soy sauce, and vegetable broth to the chickpeas. Mix until well combined.
    3. Form the mixture into balls.
    4. Heat olive oil in a pan over medium heat. Cook meatballs, turning occasionally, until browned on all sides, about 10-15 minutes.
