Recipe Description

Savor the taste of our Classic Vegan Sausage Rolls, a plant-based twist on a beloved classic. These rolls feature a savory filling made from a blend of lentils, mushrooms, and herbs, wrapped in flaky, golden puff pastry. Baked to perfection, they offer a delicious and satisfying snack or meal. Ideal for parties or a quick bite, these sausage rolls are sure to be a hit with everyone.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 400g can of chickpeas, drained and rinsed
  • 150g mushrooms, chopped
  • 1 tsp smoked paprika
  • 1 tbsp soy sauce
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 sheet of vegan puff pastry
  • Sesame seeds (for topping)

Steps:

  1. Heat the olive oil in a frying pan over medium heat. Add the onion and garlic, sauté until soft.
  2. Add the carrot and mushrooms to the pan, cook for 5 minutes until they start to soften.
  3. In a food processor, combine the sautéed vegetables, chickpeas, smoked paprika, soy sauce, and thyme. Pulse until the mixture is combined but still has some texture.
  4. Preheat your oven to 200°C (400°F).
  5. Roll out the puff pastry on a lightly floured surface. Cut the pastry sheet in half lengthways.
  6. Roll the pastry over the filling, sealing the edge with a little water. Cut each long roll into four pieces.
  7. Place the sausage rolls on a baking sheet, brush the tops with a little water, and sprinkle sesame seeds over them.
  8. Bake for 20-25 minutes or until the pastry is golden and puffed.
  9. Let the sausage rolls cool for a few minutes before serving.
