Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper
- 2 large carrots, cut into chunks
- 2 large potatoes, cut into chunks
- 1 bell pepper, cut into chunks
- 1 zucchini, cut into chunks
- 2 tomatoes, chopped
- 1 cup vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Steps:
- Heat olive oil in a large pot or tajine over medium heat. Add onion and garlic, cook until softened.
- Add cumin, coriander, cinnamon, and cayenne pepper. Cook for another minute until fragrant.
- Add the carrots, potatoes, and bell pepper. Cook for 5 minutes.
- Incorporate the zucchini, tomatoes, and vegetable broth. Season with salt and pepper. Bring to a boil then reduce to a simmer. Cover and cook for 45 minutes.
