    These Cranberry Orange Vegan Scones are a delightful treat, perfect for any occasion. With a flavorful blend of tart cranberries and vibrant orange zest, these scones offer a burst of freshness in every bite. They’re adorned with a light, golden crust and a tender, moist interior. Crafted without dairy or eggs, they retain the classic scone quality while catering to a vegan diet. Serve these scones warm for breakfast or as an afternoon snack, where they are sure to impress with their bright flavors and wholesome texture.

    Ingredients

    • 1/3 cup granulated sugar
    • 1 tbsp baking powder
    • 1/2 tsp salt
    • 1/2 cup cold vegan butter
    • 2/3 cup dried cranberries
    • 1 tbsp orange zest
    • 1/2 cup almond milk
    • 1 tsp vanilla extract

    Steps:

    1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
    2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
    3. Cut the cold vegan butter into the dry mixture until it resembles coarse crumbs.
    4. Stir in dried cranberries and orange zest.
    5. In a separate bowl, mix almond milk and vanilla extract.
    6. Turn dough onto a floured surface and knead gently.
    7. Form into a disc and cut into 8 wedges.
    8. Place the wedges on the prepared baking sheet.
    9. Bake for 20 minutes or until golden brown.
