    This Creamy Vegan Corn Soup blends the natural sweetness of corn with the richness of coconut milk to create a heartwarming dish that’s perfect for any day of the year. Light yet satisfying, this soup bursts with flavors, enhanced by a hint of garlic and the freshness of cilantro. Ideal for a quick lunch or a comforting dinner, it’s also a great choice for special festive meals or casual gatherings.

    Ingredients

    • 1 tablespoon olive oil
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 3 cups vegetable broth
    • 1 cup coconut milk
    • Salt and pepper to taste
    • Chopped cilantro for garnish

    Steps:

    1. Heat olive oil in a large pot over medium heat.
    2. Add onions and garlic, sauté until soft.
    3. Stir in the corn kernels, cook for 2 minutes.
    4. Add vegetable broth and bring to a boil.
    5. Reduce heat and simmer for 15 minutes.
    6. Stir in coconut milk and season with salt and pepper.
    7. Cook for another 5 minutes on low heat.
    8. Serve hot, garnished with chopped cilantro.
