Recipe Description

These crispy, golden-brown quinoa cakes make a delicious and nutritious meal or snack. Packed with protein and fiber, they’re perfect on their own, or served with a side salad or your favorite dipping sauce.

Ingredients

  • 2 cups cooked quinoa, cooled
  • 1/2 cup breadcrumbs
  • 1/2 cup finely chopped onions
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 flax eggs (2 tablespoons flaxseed meal mixed with 6 tablespoons water)
  • 2 tablespoons olive oil, for frying

Steps:

  1. In a large bowl, mix together the quinoa, breadcrumbs, onions, nutritional yeast, salt, pepper, and flax eggs until well combined.
  2. Heat olive oil in a pan over medium heat.
  3. Form the quinoa mixture into patties and fry for 4-5 minutes on each side, or until golden and crispy.
