These crispy, golden-brown quinoa cakes make a delicious and nutritious meal or snack. Packed with protein and fiber, they’re perfect on their own, or served with a side salad or your favorite dipping sauce.
Ingredients
- 1/2 cup breadcrumbs
- 1/2 cup finely chopped onions
- 1/4 cup nutritional yeast
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 flax eggs (2 tablespoons flaxseed meal mixed with 6 tablespoons water)
- 2 tablespoons olive oil, for frying
Steps:
- In a large bowl, mix together the quinoa, breadcrumbs, onions, nutritional yeast, salt, pepper, and flax eggs until well combined.
- Heat olive oil in a pan over medium heat.
- Form the quinoa mixture into patties and fry for 4-5 minutes on each side, or until golden and crispy.
- Serve hot, with your choice of sides or sauces.
