This crispy vegan schnitzel is a delightful plant-based take on the Austrian classic. Made with tenderized seitan and breaded with seasoned breadcrumbs, fried to golden perfection. Serve with lemon wedges and your choice of vegan side dishes for a comforting meal.
Ingredients
- 4 seitan cutlets
- 1/2 cup all-purpose flour
- 1 cup plant-based milk
- 1 tablespoon Dijon mustard
- 1 cup breadcrumbs
- 1 teaspoon paprika
- Salt and pepper to taste
- Oil for frying
- Lemon wedges for serving
Steps:
- Pound the seitan cutlets to about 1/4 inch thickness.
- Set up three shallow dishes: one with flour, one with milk mixed with mustard, and one with breadcrumbs mixed with paprika, salt, and pepper.
- Dip each cutlet into the flour, then the milk mixture, and finally coat evenly with the breadcrumb mixture.
- Heat oil in a frying pan over medium-high heat. Fry each cutlet for about 2-3 minutes on each side, until golden brown and crispy.
- Serve hot with lemon wedges on the side.
