- 1 cup red lentils
- 2 cups vegetable broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 2 tablespoons curry powder
- Salt and pepper to taste
- 2 tablespoons olive oil for frying
Steps:
- Cook lentils in vegetable broth until soft, then drain any excess liquid.
- Saute onion and garlic in a pan until soft.
