Ingredients

  • 1 cup red lentils
  • 2 cups vegetable broth
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 2 tablespoons curry powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil for frying

Steps:

  1. Cook lentils in vegetable broth until soft, then drain any excess liquid.
  2. Saute onion and garlic in a pan until soft.
  3. Mix lentils, onion, garlic, carrot, curry powder, salt, and pepper in a bowl.
