Ingredients
- 1 onion, chopped
- 2 carrots, diced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 2 potatoes, diced
- 1 cup green beans, cut into 1-inch pieces
- 1 cup tomato sauce
- 3 cups vegetable broth
- 1 teaspoon dried thyme
Steps:
- Heat the olive oil in a large pot over medium heat. Add the onion and carrots, and sauté for 5 minutes.
- Add the red bell pepper, zucchini, potatoes, and green beans to the pot. Cook for another 5 minutes, stirring occasionally.
- Pour in the tomato sauce and vegetable broth. Stir in the dried thyme, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 30 minutes, or until the vegetables are tender.
- Taste and adjust the seasonings, if necessary.
