    Drawing inspiration from the traditional Armenian barbecue, or khorovats, this vegan recipe reimagines the classic dish using tofu as the main ingredient. The process begins with pressing and marinating extra-firm tofu in a blend of Armenian spices, garlic, lemon, and pomegranate molasses, infusing it with a rich, tangy, and slightly sweet flavor profile characteristic of the region’s cuisine. After marinating, the tofu is grilled to perfection, achieving a crispy exterior and a tender, flavorful interior. This recipe not only pays homage to the culinary traditions of Armenia but also provides a delightful plant-based alternative to the meat-centric feast. The tofu khorovats can be served with a side of grilled vegetables and lavash for a complete meal.

    Ingredients

    • 1 block extra-firm tofu
    • 2 cloves garlic, minced
    • 1 lemon, juiced
    • 2 tablespoons pomegranate molasses
    • 1 teaspoon smoked paprika
    • 1 teaspoon ground coriander
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • Fresh parsley for garnish

    Steps:

    1. Press tofu for 30 minutes to remove excess water.
    2. Whisk together garlic, lemon juice, pomegranate molasses, spices, olive oil, salt, and pepper in a bowl.
    3. Cut tofu into cubes, marinate in the mixture for at least 1 hour.
    4. Preheat grill to medium-high heat.
    5. Thread tofu cubes onto skewers.
    6. Serve with fresh parsley and a side of grilled vegetables.
