    A sweet and savory casserole featuring sweet potatoes, a hint of pineapple, and a crunchy pecan topping.

    Ingredients

    • 1/2 cup brown sugar
    • 1/4 cup coconut milk
    • 1/4 cup pineapple, crushed
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon salt
    • 1/2 cup pecans, chopped
    • 1/4 cup flour
    • 1/4 cup vegan butter
    • 1/4 cup maple syrup

    Steps:

    1. Preheat oven to 350°F.
    2. Mix sweet potatoes, brown sugar, coconut milk, pineapple, vanilla, and salt.
    3. Spread mixture into a baking dish.
    4. Combine pecans, flour, vegan butter, and maple syrup; sprinkle over sweet potato mixture.
    5. Bake for 45 minutes or until topping is golden.
