These vegan loaded potato skins are packed with flavor and perfect for any occasion. Crispy skins filled with a creamy, savory mixture, topped with vegan cheese and green onions, they’re a comforting and satisfying crowd-pleaser.
Ingredients
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 cup vegan cheese shreds
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels
- 1/4 cup chopped green onions
- 1/2 cup vegan sour cream
- 1/4 cup vegan bacon bits
Steps:
- Preheat your oven to 400°F (204°C). Prick potatoes with a fork and bake for 50 minutes, or until tender.
- Let the potatoes cool slightly, then cut in half lengthwise and scoop out the flesh, leaving a small border of potato on the skin.
- Increase the oven temperature to 450°F (232°C). Brush both sides of the potato skins with olive oil and season with salt and pepper. Place skin-side up on a baking sheet and bake for 10 minutes.
- Flip the potato skins and bake for an additional 10 minutes, or until crisp.
- Fill each skin with vegan cheese, black beans, and corn. Return to the oven for 5 minutes, or until the cheese has melted.
