- 4 chalupa shells or tostadas
- 1 cup vegan refried beans
- 1 avocado, sliced
- 1 cup lettuce, shredded
- 1 tomato, diced
- 1/2 cup vegan chipotle queso
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, cut into wedges
- Salt and pepper to taste
Steps:
- Preheat oven to 375°F (190°C) if using chalupa shells that need to be baked.
- Spread vegan refried beans on each chalupa shell.
- Top with avocado slices, lettuce, tomato, and diced onion.
