    Recipe Description

    Crispy chalupas loaded with flavorful beans, fresh veggies, and a decadent chipotle queso that’s entirely vegan! Perfect for any party or a family dinner.

    Ingredients

    • 4 chalupa shells or tostadas
    • 1 cup vegan refried beans
    • 1 avocado, sliced
    • 1 cup lettuce, shredded
    • 1 tomato, diced
    • 1/2 cup vegan chipotle queso
    • 1/4 cup red onion, diced
    • 1/4 cup cilantro, chopped
    • 1 lime, cut into wedges
    • Salt and pepper to taste

    Steps:

    1. Preheat oven to 375°F (190°C) if using chalupa shells that need to be baked.
    2. Spread vegan refried beans on each chalupa shell.
    3. Top with avocado slices, lettuce, tomato, and diced onion.
    4. Generously drizzle vegan chipotle queso over each chalupa.
    5. Garnish with chopped cilantro and serve with lime wedges on the side.
