Peel the potatoes and cut them into thick fries.
Rinse the fries in cold water to remove excess starch, then dry thoroughly with a clean towel.
Heat oil in a deep fryer or large pot to 160°C (320°F). Fry the potatoes in batches for about 5-7 minutes, until they start to soften. Remove and drain on paper towels.
Increase the oil temperature to 180°C (356°F). Fry the potatoes again in batches for 5-7 minutes, until golden and crisp.
Drain the fries on paper towels and sprinkle with sea salt while still hot.
