Combine flour, sugar, salt, and yeast in a large bowl.
Add the lukewarm plant-based milk and mix to form a dough.
Knead the dough for 5-10 minutes until elastic.
Roll out the dough into a rectangle, and distribute the cubed vegan butter across 2/3 of the surface. Fold and roll several times to incorporate layers.
Chill the dough for at least 1 hour.
Place the croissants on a baking sheet, cover, and let rise until doubled in size.
Preheat the oven to 375°F (190°C).
Brush the croissants with a mixture of soy milk and agave syrup.
Bake for 25 minutes or until golden brown.
