To make the dough, mix flour and a pinch of salt, then cut in coconut oil until the mixture resembles breadcrumbs. Gradually add cold water until a dough forms. Cover and chill for 30 minutes.
Cook lentils in water with a pinch of salt until tender but not mushy, drain and set aside.
In a pan, sauté garlic, onion, turmeric, curry powder, and thyme until the onion is soft. Add cooked lentils and cook for another 5 minutes. Season with salt and pepper.
Preheat the oven to 350°F (175°C).
Roll out the dough on a floured surface and cut into circles. Place a spoonful of the lentil filling onto half of each circle. Fold over and seal the edges with a fork.
