Preheat oven to 350°F (175°C) and grease two 9-inch cake pans.
In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
Add non-dairy milk, vegetable oil, apple cider vinegar, and vanilla extract, and mix until smooth.
Divide batter evenly between prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow cakes to cool completely before assembling.
Place second cake layer on top and cover with remaining whipped coconut cream.
Decorate with fresh cherries and dark chocolate shavings.
Chill for at least an hour before serving.
