Method
Tested in our kitchen
Heat oil in a large pan over medium heat.
Add cumin seeds and let them sizzle.
Add onions and sauté until they turn golden brown.
Stir in ginger, garlic, and green chili. Cook for 2 minutes.
Mix in tomato puree and cook until oil separates from the mixture.
Stir in chickpeas, water, and bring the mixture to a boil.
Reduce heat and simmer for 30 minutes.
Add garam masala and amchur. Cook for another 5 minutes.
Garnish with chopped cilantro and serve hot.
