Indulge in the festive spirit with these delightful vegan mince pies, featuring a crisp, buttery crust and a rich, spiced mincemeat filling.

Preheat your oven to 200C/390F.
Place the flour and vegan butter in a large bowl. Rub the butter into the flour using your fingertips until the mixture resembles breadcrumbs.
Gradually add cold water and mix until a dough forms. Wrap in cling film and chill for 15 minutes.
Roll out the dough on a lightly floured surface and cut out circles using a pastry cutter. Press these circles into a muffin tray to form the pie bases.
Spoon vegan mincemeat into each pastry case.
Brush the tops with plant milk and bake for 18-20 minutes or until golden.
Allow to cool slightly, then remove from the tin and dust with icing sugar before serving.
