    This delightful vegan dish brings together the earthy flavors of lentils and fresh spinach, creating a rich and hearty meal that is both nutritious and satisfying.     Ingredients

    • 1 cup red lentils
    • 2 cups spinach, chopped
    • 1 onion, chopped
    • 2 garlic cloves, minced
    • 1 tablespoon ginger, grated
    • 1 teaspoon cumin seeds
    • 1 teaspoon turmeric
    • 1 teaspoon coriander powder
    • 1 teaspoon garam masala
    • 1 teaspoon salt
    • 1/2 teaspoon cayenne pepper
    • 2 tablespoons oil
    • 4 cups water
    • fresh cilantro for garnish

    Steps:

    1. Rinse the lentils thoroughly under cold water.
    2. In a large pot, heat oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
    3. Add onions, garlic, and ginger, and sauté until onions are translucent.
    4. Stir in turmeric, coriander powder, and cayenne pepper. Cook for another minute until fragrant.
    5. Add the lentils and water to the pot. Bring to a boil, then reduce heat to simmer.
    6. Stir in garam masala, salt, and chopped spinach. Cook for an additional 5 minutes.
    7. Adjust seasoning as needed and garnish with fresh cilantro before serving.
