Ingredients

  • 14 oz firm tofu
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 carrot
  • 1 cup pineapple chunks
  • 1/4 cup rice vinegar
  • 3 tbsp ketchup
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water

Steps:

  1. Press the tofu to remove excess water; cut into cubes.
  2. Marinate tofu in soy sauce, then toss in cornstarch.
  3. Heat oil in a pan and fry tofu until golden and crispy. Remove and set aside.
  4. In the same pan, stir-fry bell peppers and carrot until tender-crisp.
  5. Add pineapple chunks to the pan and stir well.
  6. Pour sauce into the pan, stir, and cook until thickened.
  7. Return the tofu to the pan, toss to coat with the sauce, and heat through.
  8. Serve hot with rice or noodles.
