Ingredients
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- 1 red bell pepper
- 1 green bell pepper
- 1 carrot
- 1 cup pineapple chunks
- 1/4 cup rice vinegar
- 3 tbsp ketchup
Steps:
- Press the tofu to remove excess water; cut into cubes.
- Marinate tofu in soy sauce, then toss in cornstarch.
- Heat oil in a pan and fry tofu until golden and crispy. Remove and set aside.
- In the same pan, stir-fry bell peppers and carrot until tender-crisp.
- Add pineapple chunks to the pan and stir well.
- Pour sauce into the pan, stir, and cook until thickened.
- Return the tofu to the pan, toss to coat with the sauce, and heat through.
- Serve hot with rice or noodles.
