Ingredients
- 1 tbsp olive oil
- 1 block tofu, crumbled
- 1 tsp turmeric
- 1/2 tsp paprika
- 1/4 cup nutritional yeast
- 1 can black beans, drained and rinsed
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 cup spinach, chopped
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- 4 large tortillas
- Salt and pepper, to taste
Steps:
- Heat olive oil in a skillet over medium heat. Add crumbled tofu, turmeric, paprika, and a pinch of salt and pepper. Cook until lightly browned, stirring occasionally, about 10 minutes.
- Add the black beans, bell pepper, and red onion to the skillet. Cook for another 10 minutes, until vegetables are tender.
- Stir in nutritional yeast, spinach, cilantro, and lime juice. Cook until spinach is wilted, about 2 minutes.
- Warm the tortillas according to package instructions. Divide the tofu mixture among the tortillas, fold snugly, and serve immediately.
