Airag, traditionally a fermented mare’s milk, holds a central place in Mongolian culture, reflecting their rich pastoral lifestyle. Our version, however, transcends the dairy realm, offering vegans and lactose-intolerant individuals alike the opportunity to savor its unique tartness and refreshing qualities. By utilizing a blend of plant-based milks fermented with vegan-friendly kefir grains, this recipe ingeniously captures the distinctive flavor profile of traditional Airag. Enhanced with a subtle sweetness and served chilled, it promises an exhilarating culinary journey, suitable for a variety of occasions, from a refreshing summer drink to a novel culinary experiment.

    Ingredients

    • 4 cups unsweetened almond milk
    • 2 tablespoons vegan kefir grains
    • 1 tablespoon organic sugar (optional for accelerating fermentation)

    Steps:

    1. In a large jar, combine almond milk with vegan kefir grains.
    2. Cover the jar with a breathable cloth and secure with a rubber band. Let it ferment at room temperature for 24-48 hours, depending on your taste preference.
    3. Once fermented to your liking, strain out the kefir grains. Optionally, add sugar to taste, and store the Airag in the refrigerator.
    4. Serve chilled for a refreshing taste.
