Recipe Description

This creamy Vegan Amaranth Porridge is a perfect alternative to traditional breakfast cereals. Made from the ancient grain amaranth, which was a staple food of the Aztecs and remains a native crop in Peru, this dish is naturally gluten-free and rich in proteins and fibers. With a subtle, nutty flavor, it is enriched with the natural sweetness of almond milk and the fruity zing of fresh berries, making it a nutritious and delicious way to start your day.

Ingredients

  • 1 cup amaranth
  • 3 cups almond milk
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/4 cup fresh berries
  • 1 tbsp flaxseeds

Steps:

  1. Rinse amaranth under cold water using a fine mesh strainer.
  2. In a medium saucepan, combine amaranth and almond milk. Bring to a boil.
  3. Reduce heat to low and simmer, uncovered, stirring occasionally, until mixture is thick and creamy, about 20 minutes.
  4. Stir in vanilla extract, maple syrup, and cinnamon.
  5. Serve hot topped with fresh berries and flaxseeds.
