    Recipe Description

    A festive vegan version of the traditional Irish fruit bread, perfect for any celebration.

    Ingredients

    • 1 cup dried fruit mix
    • 1 cup strong black tea
    • 1/2 cup brown sugar
    • 1/4 cup applesauce (as egg substitute)
    • 1 tsp baking powder
    • 1 tsp mixed spice
    • 1/2 tsp salt

    Steps:

    1. Soak dried fruit in black tea overnight.
    2. Preheat oven to 325°F (165°C).
    3. Mix flour, sugar, baking powder, mixed spice, and salt in a large bowl.
    4. Stir in soaked fruit along with any leftover tea and applesauce.
    5. Pour into a greased loaf pan.
    6. Let cool before slicing.
