Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely grated carrot
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil for frying
- 4 vegan burger buns
- Lettuce, tomato, vegan mayonnaise, and avocado slices for serving
Steps:
- In a medium bowl, mash the black beans with a fork until mostly smooth but with some whole beans remaining for texture.
- Add the breadcrumbs, onion, carrot, garlic, cumin, smoked paprika, chili powder, salt, and pepper to the mashed beans. Mix until well combined.
- Form the mixture into 4 burger patties.
- Heat the olive oil in a pan over medium heat. Fry the patties for 5 minutes on each side, or until they are golden brown and heated through.
- Toast the burger buns lightly, if desired.
